Miserable Monday

It’s been rainy and miserable here, I haven’t been going out for walks or exercising. I’ve just been wallowing in self pity and indulging in Easter candy. Granted it was not much Easter candy. I’ve been choosing more healthy food lately and came up with “Lazy dirty rice”. I felt like a genius, why hadn’t anyone thought of this before?! It was so simple and easy to make, and of course really tasty. It could be great for burrito filling or paired with meat for taco night. So without further ado, my lazy rice recipe.

Lazy dirty rice

OneĀ  saucepan.

Box of Far East Spanish rice, It can be any Spanish rice I just like the tasty of the Far East

Cubed sweet potato

Frozen corn

Peas

(any veggie you can think of really)

I also mix in black or kidney beans at the end.

Cheese

Directions:

Bring the water to a boil (I add a tiny bit more water than the box says)

Mix in the rice

and the veggies

Put the cover on the lid

Set the timer

Mix in optional beans

Done!

I love how it cooks everything at once usually Baby Bear is having a melt down right around when I would like to have my dinner. I am not a huge fan of frozen dinners so I keep looking for something quick and easy but also relatively healthy. I am not sure what the salt content is with the Far East rice, but I don’t eat fast food or have any large sources of salt intake. Probably why I go on salt binges.

    eh, we’re having tornado warning s so i probably wont even eat to avoid g=leaving the house. your recipe sounds good. are you vegetarian? i can’t remember.

    Most of the time I am vegan, but have eggs and bacon occasionally!
    Tornado’s are scary.
